- 5 Cups milk, full cream
- 1/4 cup rice (washed)
- 1/2 cup sugar
- 10-12 Raisins

Preparation Process
- Take ¼ cup basmati rice then rinse a couple of times in the fresh water and soak in enough water for 15 – 20 minutes.
- While the rice is getting wet, pour 1 litre of milk into a big and wide pan. You can also use a smaller pot or frying pan.
- Keep the pan on medium-low heat. Then stir at intervals so that the milk does not burn at the bottom of the pan.
- Stop stirring and Let the milk come to a boil.
- Take 1 tablespoon of milk from the pan in a small bowl. Let the milk become warm.
Next, put a small amount of saffron threads into the milk and Keep aside.
Cook Rice
- Drain all the water from the rice, after the milk begins to boil and add it with the boiling milk.
- Mix it’s very well with a spoon.
- Cook the rice on mid-low heat. When the rice is cooking no need to cover the pan.
- Cook the rice grains till they are half-done or 45%-50% done.
- Then add 5 – 6 tablespoons sugar or as required (based on quantity). You can also add raw sugar or white sugar. We generally use unrefined raw sugar.
- Mix the sugar in the milk very well.
- Continue to cook rice on low to medium-low heat. Stir at intervals.
- Simmer till the rice grains are almost cooked.
Flavour Rice Kheer
- Then add ½ teaspoon green cardamom powder.
- Add 1 tablespoon each of sliced almonds, sliced pistachios and chopped cashews. If you like, you can quickly cook the almonds in hot water, which is called blanching. Otherwise, you can simply cut them without cooking. You can use various other nuts according to your preferences.
- Mix them very well.
- Then add the saffron milk which was prepared before.
- Again mix them and cook the Rice Kheer on low heat until it becomes thick or until the rice grains are fully cooked.
- When the rice grains soften completely switch off the heat. The Kheer will also thicken. Remove the bits of milk stuck on the pan’s edges and put them into the Kheer.
*Note that Rice Kheer thickens more on cooling.
- Lastly, add 1 tablespoon of raisins.
- Pour the Rice Kheer into separate bowls for serving, and you can enjoy it hot, warm, or cold. If you have any leftovers, store them in the refrigerator and make sure to eat them within 1 to 2 days. You can eat the Kheer cold or reheat it to warm it up. If the Kheer becomes too thick, just add a little bit of milk and heat it again.
