Veg Fried Rice Ingredients
1 cup basmati rice
1/2 cup carrot finely chopped
1/2 cup capsicum
3/4 cup cabbage
1/4 cup beans finely chopped
1/4 cup spring onions – green part finely chopped
1 tbsp spring onions – white part finely chopped
1 tbsp garlic finely chopped
1 tsp soya sauce
2 tsp pepper powder
3 tbsp oil
salt to taste
water as needed
Veg Fried Rice Recipe Step By Step
1) Soak 1 cup of basmati rice in water for 15 minutes.
2) Leave it undisturbed. Soaking helps the grains separate and makes the rice soft and fluffy.
3) Clean the rice well until the starchy water is washed off. Then drain all the water.
4) In a saucepan, add 4 cups of water and bring it to a boil. Add the required amount of salt.
5) Add the drained rice to the boiling water.
6) Give it a quick mix and cook on low to medium heat for 6-8 minutes.
7) The rice should be soft but not too mushy. When pressed hard, it should mash a little. That’s the right stage. Immediately switch off the heat.
8) Transfer the rice to a colander and drain all the water.
9) Spread the rice on a plate to cool down. Set it aside.
10) In a wok, add 2 tablespoons of oil. Add 1 tablespoon of finely chopped garlic and 1 tablespoon of the white part of spring onions.
11) Saute for a minute.
12) Add 1/2 cup of chopped carrots, 1/2 cup of capsicum, 1/4 cup of thinly sliced beans, and 3/4 cup of shredded cabbage.
13) Saute for 2 minutes on high heat, stirring continuously until the veggies start to shrink.
14) Add salt to taste, 1 teaspoon of vinegar, 1 teaspoon of soya sauce, and 1 teaspoon of pepper powder.
15) Give it a quick stir.
16) Add the cooked rice.
17) Add 1/2 teaspoon of crushed pepper and 1/4 cup of the green part of spring onions.
18) Give it a quick mix. Toss the rice on high heat for 2 minutes and then switch off the heat.
19) Tasty Veg Fried Rice is ready!

Basmati rice is best for fried rice. Aged long-grained basmati rice is perfect for any fried rice recipe.
- WHICH OIL IS BEST FOR COOKING FRIED RICE?
